Pork Loin with Fig Red Wine Reduction


Ingredients (Pork Loin)

1 pork loin

Salt and pepper

2 TBSP Rosemary, minced

Olive oil

Directions

  1. Preheat oven to 375 degrees. Rub pork loin down with oil and season with salt, pepper, and rosemary. Cook until pork loin is 135 degrees. Let rest for ten minutes before slicing.

 

Ingredients (Fig Red Wine Reduction)

1 1/2 cups red wine

1 Tbsp minced rosemary

1 Tbsp ,minced shallots

3 TBSP honey

1/4 cup diced figs

1/4 cup diced dates

1 Star anise

2 TBSP butter

Directions

  1. In a small sauce pot , sauté shallots in melted butter until translucent. Add the wine, rosemary, honey, and star anise. Reduce by half, strain sauce through a fine strainer. Return to pot and whisk in butter over low heat.
