Sloppy Joes with Red Potato Salad

Ingredients (Sloppy Joes)

1 1/2 lbs. ground beef

1 cup ketchup

1 cup mustard

1/2 cup tomatoes, diced

1 red pepper, diced

1 green pepper, diced

2 cloves garlic, minced

1 tablespoon red pepper flakes

1 tablespoon onion powder or 1/4 cup diced fresh onion

1 teaspoon hot sauce

hamburger bun

 

Directions

1. Brown then drain ground beef.
2. Add all other ingredients (except buns).
3. Stir, bring to boil, cover and simmer on low for about 10 minutes.
4. Keep stirring.
5. Serve on hamburger buns, fixed to your preference.

 

Ingredients (Potato Salad)
2 lbs. red potatoes peeled and cut into 3/4-inch chunks
1 cup Hellmann’s Mayonnaise
2 Tbsp. vinegar
1 1/2 tsp. salt
1 tsp. sugar
1/4 tsp. ground black pepper
1 cup thinly sliced celery
1/2 cup chopped onion
2 hard-cooked eggs, chopped

 

  1. Cover potatoes with water in 4-quart saucepot; bring to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are tender, about 10 minutes. Drain and cool slightly.
  2. Combine Mayonnaise, vinegar, salt, sugar and pepper in large bowl. Add potatoes, celery, onion and eggs and toss gently. Chill for 24 hours.
  3. Adjust seasoning if needed Serve chilled or at room temperature
