Thai Halibut with Rice Noodles

Ingredients

1 pound fresh halibut cut into cubes

1 teaspoon turmeric

1 red pepper sliced

2 cloves garlic sliced very thin

1 Tablespoon slivered fresh ginger

Sunflower oil

2 TBSP brown sugar

3 TBSP fish sauce

2-3 TBsp rice wine vinegar

Rice noodles

2 baby bok choy

1/2 cup chopped peanuts

Juice of 1 fresh lime

 

Directions

  1. Marinate halibut with sugar, rice, turmeric wine, fish sauce, and 1 tsp lime juice in a ziploc up to 2 hours.
  2. Heat wok pan to high, add 1 TBSP sunflower oil.  Add halibut chunks and stir fry letting the halibut brown slightly on all sides, about 4 minutes.
  3. Remove fish, wipe out wok and add another tablespoon of oil. Add red pepper and stir fry. Add a splash of lime juice.
  4. Add rice noodles, baby bok choy and fish. Serve with cilantro and chopped peanuts.
