Chef Judi’s Dish Cedar Plank Salmon with Horseradish Chive Crème Fraise

Serves 4-5
Nothing like a trip to the Farmer’s Market for fresh caught Salmon. I love Maggie’s and often swap recipes with Gary.
2 cedar planks, untreated- soaked for at least one hour in water

Ingredients

For the salmon
1 TBSP. lemon zest
1/1/2 sp. Fresh thyme
½ cup sugar
2 – 2 pound skin on salmon filets
2 TBSP. extra virgin olive oil

Sauce:
½ cup crème fraise
3 TBSP. minced fresh chives
1 ½ Lbs. horseradish (prepared)kosher salt and black pepper

Directions

  1. Mix ingredients and place in refrigerator until ready. Top salmon with sauce.
  2. Mix lemon zest, thyme sugar and oil, rub onto salmon. Either preheat oven to 400 degrees or grill at medium.
  3. Rub the salmon with thyme mixture and let rest in refrigerator or 20-30 minutes…. Grill or roast until salmon is 135 degrees
