Cinco de Mayo Breakfast Hash

For fresh from the farm I asked Three sons Ranch in Punta Gorda to bring us some of their ground bison. Lean and flavorful, ground bison is a perfect choice for burgers, chili and what I call breakfast scrambles.

Trending this year are the breakfast tacos so what better way to kick off May 5th then with a breakfast bison has that you can wrap around a soft taco or eat with poached eggs.

Paired with simple but fresh all-natural salsa and guacamole from The Fresh Market, I am ready to celebrate.

 

Ingredients

2 pounds ground bison

2 sweet potatoes peeled and diced

1 onion diced

1 4 ounce can green chiles drained

Kosher salt and black pepper

2 fresh tomatos diced

2 cups fresh spinach chopped

Olive oil

4 poached eggs (or sunny side up- optional)

½ cup fresh salsa

Garnish

Shredded Monterey jack cheese

Sour cream

Sliced avocados

Cilantro

Directions

  1. Remove bison from pan after browned.
  2. Add  1 TBSP. olive oil and sauté onions until translucent. Add sweet potatoes and toss often until slightly tender. Add tomato and drained canned green chiles and simmer. Season and add ½ cup salsa.
  3. Add chopped spinach and toss.
  4. Serve on a plate with eggs and shredded cheese or wrap in flour tortillas
  5. Garnish with sour cream, guacamole if desired
