Pan Seared Mahi Mahi with Spicy Mango, Papaya Salsa

Fresh Mahi Mahi

Ingredients
Kosher salt and white pepper to taste
2 tsp. plum sauce
1 tsp. soy sauce
? cup Asian pear, chopped
1 tsp. cilantro, minced
1 tsp. jalapeno or Serrano chile, diced
1 TBSP. red onion diced
1 TBSP. fresh lemon juice
1 tsp. brown sugar
1 TBSP. red pepper, diced
1 mango, diced
julienne or tortilla strips, fried for garnish
papaya, fan shaped (garnish)

Directions

  1. Season the fish and grill quickly on a non stick surface. Mix all salsa ingredients together, add honey or brown sugar or asian chili sauce if you desire the flavor more spicy.
  2. Arrange two pieces of Mahi Mahi on dinner plate, leaning on ontop of the other for the height. Spoon salsa in center of fish. Garnish plate with a slight swirl of ceracha sauce (very spicy, warn your guests) and the opposite side with papaya fan.
