Author: Malin Parker
Yield: 2 Cups

Ingredients

½ lb Bacon, Small Dice
½ Cup Red Wine Vinegar
¾ Cup Brown Sugar
1 tsp. Dry Mustard
2 tsp. Kosher Salt
½ tsp. Ground Black Pepper
1 tsp. Garlic, Minced
1 Cup Rendered Bacon Grease + Olive Oil Blend

Directions

  1. Render the bacon in a sauté pan until the bacon is crispy. Strain off the grease and reserve, transfer the bacon into another pan so that it does not continue to cook with the possibility of burning.
  2. In a cambro, combine the vinegar, sugar, dry mustard, salt, pepper and garlic. Using a submergible blender, gradually add in the bacon grease / olive oil mixture. After all of the oil has been added, add the cooked bacon. Serve warm.
