Apple Bread Pudding #2

Ingredients

1 loaf cinnamon babka or 6 stale cinnamon rolls
2 cups half and half
2 teaspoons pure vanilla extract
2 Macintosh apples peeled and chopped
6 eggs
2 tablespoons pumpkin butter
Cinnamon
1/4 cup sugar

Directions

  1. Heat oven to 350. Make water bath by lining large pan with 1 inch hot water. Place heavy buttered casserole dish inside.
  2. Beat eggs with vanilla, cinnamon, sugar, and milk or half and half.
  3. Fold in broken cinnamon loaf. Blend in chopped apples.
  4. Pour into buttered casserole dish that sits in a water bath. Swirl pumpkin curd or pumpkin butter into bread pudding. Cover with aluminum foil and bake covered for 30 minutes then approximate 15 minutes uncovered or until custard is firm. Top with caramel gelato and serve warm.
