Grilled Cornish Game Hens with Apricot Chipotle Glaze

Ingredients
4 cornish game hens, split
1 cup apple cider
2 Tablespoons Kosher salt
1 Teaspoon Black peppercorns

Directions

  1. Split game hens and rinse under cold water. In a large bowl, mix cider, kosher salt and peppercorns. Add game hens and marinate at least 4 hours.
  2. Remove game from marinade. Season with garlic salt and place on preheated grill at medium low heat. Turn game hens about every 10 minutes to avoid black tips on the wings.
  3. Grill approximately 35 minutes until fully cooked but very moist. During the last 5 minutes, adjust heat to low and baste with apricot, chipotle glaze. Brush with glaze before serving.

 

Apricot Glaze

Ingredients:

  • 1 1/4 cups apricot preserves
  • 2 tablespoons golden rum or water
  • 1 Tablespoon Chipotle (smoked peppers)

Directions

  1. Bring the preserves and rum to a boil in a small saucepan over medium heat, stirring often. Cook, stirring often, about 2 to 3 minutes. Add Chipotle and stir well. Strain through a wire sieve into a small bowl, pressing hard on the solids. Use warm.
