Cajun Creamy Chicken and Pasta

While we are waiting for the rainy days of summer to clear, this is another flavorful indoor dish to impress friends. Warning, the dish is rich so best to serve in smaller bowls with a large field green salad

Ingredients

4 boneless chicken breasts, cut into thin strips
1 box corkscrew pasta (cooked according to directions)
2-3 TBSP. Cajun seasoning
Fresh ground black pepper
½ cup thinly sliced roasted red or yellow pepper
1 TBSP. fresh chopped parsley
1-cup herb cream cheese (such as alouette or bousin)
1/2 fresh chopped tomato
3 TBSP. Marinara sauce

Directions

  1. Toss chicken with Cajun seasoning. Heat a large sauté pan with 1 TBSP. canola oil. Add chicken and sear on both sides about 4 minutes total.
  2. Remove from pan, drain oil and place pan back on burner. Add peppers, tomatoes, another Tablespoon of Cajun seasoning and cream. Reduce by about 1/3. Add herb cream cheese and marinara sauce. Reduce on a low simmer. Add chicken and pasta and gently stir for about 1 minute until sauce is soaked into the pasta. Toss in fresh minced parsley and serve.
