Crystal Cruise Line’s Decadent Chilled Strawberry Soup

Ingredients

2 cups fresh strawberries, hulled

1 cup plain nonfat yogurt

2 cups Vanilla Ice cream

Garnish

Thyme blossom from flowering thyme sprig or mint sprigs

Directions

  1. This soup can be served as either a first course or a dessert. Other fresh berries, such as blueberries, raspberries or blackberries can be used in place of the strawberries.
    Set aside 2 large perfect strawberries for the garnish. In a blender, combine the remaining strawberries, yogurt and ice cream and blend until smooth. Refrigerate about one hour.
  2. Julienne the reserved strawberries. Pour the strawberry cream into shallow soup bowls. Garnish with the thyme flower or mint sprigs and cut strawberries.
