Tiramisu

A light and fluffy dessert for any occasion.

 

Ingredients

2 cups prepared espresso, chilled

6 egg yolks

6 egg whites

2 TBSP. vanilla extract

2 TBSP. Grand Marnier

16 oz  mascarpone cheese

2 packages lady fingers

2 Tbsp cocoa powder

Chocolate shavings

3 Tbsp sugar

 

Directions

  1. Whip egg whites until stiff peaks form, set aside.
  2. Beat egg yolks with sugar and vanilla until mixture becomes creamy and doubles in volume. Add mascarpone cheese to egg yolk mixture and mix well for five minutes.
  3. Fold in egg whites to the cheese mixture and set in refrigerator to cool.
  4. To build the tiramisu, one at a time soak each lady finger in the espresso quickly, no more than 3 seconds or the cookie will fall apart. Line the bottom of a deep dish pan with espresso soaked lady fingers then place a layer of the mascarpone cheese mixture, followed by a layer of espresso soaked ladyfingers, then a final layer of the mascarpone mixture.
  5. Cover with plastic wrap and allow to set overnight. Garnish with cocoa powder and chocolate shavings.
