Curried Banana Salad

Ingredients

1 Tbs. Canola Oil
3 Each Yellow Onion, Sliced in 1/8” Rings
4 Each Tomatoes, Peeled, Medium Dice
To Taste Salt
To Taste Ground Black Pepper
¾ Cup White Vinegar
1 Cup White Sugar
2 tsp. Corn Meal
2 Tbs. Curry Powder
½ Cup Apricot Jam
8 Each Bananas, Peeled & Sliced

Directions

  1. In a sauté pan, heat the oil. Add the onions and cook until soft. Add the tomatoes and simmer until cooked down. Season with salt and pepper.
  2. In a sauce pan, combine the vinegar, sugar, corn meal, curry powder and the apricot jam. Cook the mixture until it thickens slightly.
  3. Combine the onion and tomato mixture with the second mixture. Cook for 10 minutes.
  4. Cool the mixture completely, add the bananas. Allow salad to marinate for at least 2 hours before serving.
